Ingredients

1 Zucchini

Fat of choice - olive oil or coconut oil or ghee (clarified butter found in health food stores or can be made at home)

Kosher or sea salt

Other spices to taste (get creative)

Parchment paper



Instructions

  1. Preheat oven to 225 degrees
  2. Using a mandolin, thinly slice (1/8-1/4") the zucchini
  3. Place the slices on paper towels. Then place another layer on top to gently remove any excess water.
  4. Using a cookie sheet, place on parchment paper in a single layer.
  5. Brush or spray your fat choice on the slices.
  6. Season
  7. Bake for about 2-2 1/2 hours to desired crispness.
